The famous German term “pork’s knuckle” is truly perplexing. It clearly refers to a pork knuckle, so why do Hong Kong people translate it as “pig’s hand”? While the name and meaning don’t match, the problem lies in its frequent association with sexual harassment and perceived disrespect towards women. The real German “pork’s knuckle” is what we commonly call “pork’s knuckle” (German Pork Knuckle), originating in Heidelberg, Germany. The conventional method is to marinate it with seasonings for several days, then cook it until it’s very soft and tender. When it’s served, it should be so tender that a piece could easily fall off at the slightest touch.
I’d often heard people talk about how delicious and tender German pork knuckle was, and I really wanted to try it myself. But Germany, being in Europe, was too far away, so I had to keep that wish buried deep in my heart. That was in 2017, when a friend told me…There was a famous German pork knuckle restaurant not far from Waterloo, so our family came here after hearing about it.


This is a small, guesthouse-like restaurant located on a corner outside Waterloo. It’s often packed, and you’ll have to wait for a table. We sat down and ordered, and shortly after, the waiter brought out the pork knuckle. It was so tender it was practically trembling, looking incredibly appetizing. A gentle slice with a knife easily separated the skin and meat, releasing steam and an irresistible aroma that whetted our appetites. This restaurant also serves craft beer, including light beer and stout. Of the two, I prefer the stout. Just one sip, and the aroma lingers in your mouth. Paired with tender pork, it’s simply irresistible.
My second visit was during the pandemic in 2022. I went to the University of Waterloo with three friends and their families to visit the university’s open day and had the opportunity to visit again. I also made a point of introducing authentic German beer to a lady who was quite knowledgeable about wine; I could see the eager gleam in her eyes. When the food and drinks were served and everyone was eager to enjoy the meal, she specifically reminded me not to drink too much, as I still had to drive, in case of an accident.

Actually, there used to be a German pork knuckle restaurant near York University in western Toronto, run by a Chinese couple who had studied in Germany. My friends and I had been there before, and the pork knuckle and beer were very authentic. It’s a real shame they closed down for some reason. It’s a real pity.
